Ingredients:
Yields 12 cupcakes
- 300g self-raising flour
- 2 tsp ground cinnamon
- 2/3 cup light brown sugar (packed)
- 300g grated apple
- 125g jumbo oats
- 125g melted butter, cooled
- 2 large eggs
- 180ml milk
Method:
- Preheat your oven to 200°C (fan 180°C) and line a 12-hole muffin tray with cupcake cases.
- Combine the sifted self-raising flour, ground cinnamon, light brown sugar, grated apple, and jumbo oats in a large bowl. Mix until evenly distributed.
- Add the melted butter to the dry ingredients and mix on low speed using a mixer.
- Alternate adding the eggs and remaining dry ingredients to the mixture, mixing gently after each addition.
- Pour in the milk and continue to mix until just combined. Avoid overmixing to ensure light cupcakes.
- Divide the batter evenly among the cupcake cases, filling each about two-thirds full.
- Bake for 20 minutes, or until golden brown and a skewer inserted into the center comes out clean.
- Cool in the tray for 5–10 minutes, then transfer to a wire rack to cool completely.
