Apple, Cinnamon & Oat Cupcakes

 These wholesome cupcakes combine the natural sweetness of apples with the warm spice of cinnamon and the hearty texture of oats. Perfect for breakfast, a snack, or a comforting treat any time of day.

Ingredients:

Yields 12 cupcakes

  • 300g self-raising flour
  • 2 tsp ground cinnamon
  • 2/3 cup light brown sugar (packed)
  • 300g grated apple
  • 125g jumbo oats
  • 125g melted butter, cooled
  • 2 large eggs
  • 180ml milk

Method:

  1. Preheat your oven to 200°C (fan 180°C) and line a 12-hole muffin tray with cupcake cases.
  2. Combine the sifted self-raising flour, ground cinnamon, light brown sugar, grated apple, and jumbo oats in a large bowl. Mix until evenly distributed.
  3. Add the melted butter to the dry ingredients and mix on low speed using a mixer.
  4. Alternate adding the eggs and remaining dry ingredients to the mixture, mixing gently after each addition.
  5. Pour in the milk and continue to mix until just combined. Avoid overmixing to ensure light cupcakes.
  6. Divide the batter evenly among the cupcake cases, filling each about two-thirds full.
  7. Bake for 20 minutes, or until golden brown and a skewer inserted into the center comes out clean.
  8. Cool in the tray for 5–10 minutes, then transfer to a wire rack to cool completely.
